What is the biggest dish you can buy in a weld or centreline for a 8,1/2" rim. And backspace is mesured form the back of the rim, is this right? So if a 8' rim has a 5' dish the backspace in is 3' roughy

Centerline 8-1/2" rims come in 5" & 3-3/8" backspace.
So the biggest dish would be 5", using the rim with the 3-3/8" b/s.

Weld come in 8" and 9".

And backspace is mesured form the back of the rim, is this right? So if a 8' rim has a 5' dish the backspace in is 3' roughy

As monkey said, weld don't come in the 8.5, the 8" pro stars I have have a 3 1/2' backspace, which is the biggest dish available, others are 4 1/2 and 5 1/2.

I'm want to buy a secondhand set of convo, welds or pro stars. Don't care which rims i use, they all look good. Just have to find something with a big dish. Then i can go get another 9inch built.
