On the LS1 conversions I have worked on it was best to put a longer steering rod between the two knuckles, also for the rear pipe coming out of the head we shortened the outside of the column and just let the steering shaft untoched for more clearance. Made it much easier for extractor clearance.

I would definitely try to get the bottom uni closer to the steering rack for maximum header clearance/space if at all possible

There is quite a bit of difference in the alignment of the 2 shafts. I need 2 uni's for that reason.Are you sure you need a double?

And make sure you use high-temp duct tape on it around the headers.

Also for pipe clearance purposes, a few guys have redrilled the steering column plate which bolts onto the firewall to shift it towards the rail 10mm or so...
Sometimes it makes all the difference
I love this project.

If you are not happy with the setup then it may be worth considering revising the engine mount design. You could unbolt and flip the lower half of the engine mount then move the mounting point on the k-frame away from the steering shaft.
