What sort of dealer? I knew a bloke once that I suspect was a drug dealer who put a V8 in a Mazda.

. No different to you putting a 253 today. There were tests done by Holden to decide if putting a v8 in a lj was safe and holden decided they were not. So some of these modified cars may be around. But they never came out of a Holden plant. Even the LH Bathurst L34 had larger HQ brakes and a wider offset gts rims to make safe. The L34 went on to win the manchamps in 74 Bathurst in 75 and in 76 the first 7 cars were L34. The GTR won one Bathurst in the wet and ford was second.
Whether some left the plant or not is still speculative and yet to be proven either way.
We know for sure that some left the dealer with a V8
And no GTR ever won Bathurst, It was a GTR-XU1.
It also came very close in 73 which was a dry race I believe.
And won plenty of other events.
But yeah, a V8 would have been handy.

Holden did not decide the V8 LJ XU1 was unsafe .
It was the Motoring Press and Politicians that pressured GMH into scrapping the V8 XU1, therefore putting the kybosh on GMH fitting any V8 engine to an LJ Torana. What Holden dealers did was beyond the control of GMH.

1 or 2 may have escaped GM-H as prototypes, but they were not built as V8s at the 'plant'.

To me the plant is the factory and surrounds, but I guess what you say is true.
Also true that all XU1's are GTR's, but to me its like comparing a Sunbird to an A9X, they may look similar but the running gear was far from the same, especially early on.
But yeah no Sunbird is an A9X (unless the tags have been swapped lol), and no A9X is a Sunbird.

What would GMH have named the V8 XU1 if it had been produced?
GTR XU1 of course. By 1972 'XU1' was more than just a production option code, it was the name of a Torana model variant in it's own right
Also, I doubt GMH would have made to many visual changes to the XU1 that would scream 'there is a 5L V8 Under this bonnet', esp if they had ignored the govt and the super car scare mongers and continued with production of the V8 XU1.
Just my thoughts
