Except AU onwards onwards Falcons & all Japanese pick-ups.

My understanding is a pick up truck is a form of truck, they're quite large, like the old F100's, etc.

Coupe utilities are based on a sedan or coupe right?

A coupe utility is sedan-based & has the body & tray as one unit. That was Lew Bandt's (of Ford Australia) original design patent back in 1934 & why it was different to any other light pick-up truck in those days. On a pick-up the tray is separate & can be removed e.g. Hi-Lux, Rodeo, F-100, Triton, AU onwards Falcon etc.

This definition is getting a little bit outdated, as many people now just loosely use the term 'Ute' to cover all pick-ups & coupe utilities.

Cheers.

Do the HQ's with a tray rather than body shell also fall into that category?

That's not a Ute, it's a One-Tonner, or more correctly a cab-chassis with tray, not a tub.

I suppose you could call it a pick-up, but why use a yankee name on a good old Aussie workhorse.

Hatchback, coupe, hardtop and .... is it also a notchback?

Notchback is a styling term describing a car body style, a variation of three-box styling where the third distinct volume or "box" is less pronounced — especially where the rear deck (third box) is short.

Hatchback (a.k.a. liftback) sedans typically have the fastback profile but instead of a trunk lid, the entire back of the vehicle lifts up (using a liftgate or hatch).
